Philosophy

Time as an Ingredient.

Our journey began not with a desire to add, but to strip away. Chef Kenji spent two decades in Tokyo mastering the invisible variables of sushi: the meticulous aging of fish to break down proteins into pure umami, the exact acidity curve of the rice, the resting time of the neta before it meets the shari.

After Rain is the physical culmination of this obsessive study. A space crafted from raw hinoki wood and textured stone—an intimate theater where time slows down, allowing the subtle nuances of each season to be tasted with absolute, quiet clarity.
